Gluten-Free Buckwheat Chocolate Chip Cookies image

Buckwheat is a sweeter, richer alternative to wheat flour. They are chewy, but still fluffy! They are also not like sand paper, like most gluten-free recipes, and easily modified. You may need to add an extra 1/4 cup of buckwheat flour if desired. Also dairy free.

These cookies are the perfect combination of chewy and crunchy. I love the way the buckwheat flour gives them a slightly nutty flavor.

I love the flavor of these cookies, but they're a bit too soft for my taste. I think I'll try baking them for a few minutes longer next time.

These cookies are a great way to use up leftover buckwheat flour. They're also a good source of fiber and protein.
