Glorious Morning Muffins - Light Version image

ALL credit to JellyQueen & her recipe #95708 for posting the original Glorious Morning Muffins which are absolutely AMAZING! I just made a few tweaks to get a bit more nutritional value into them and wanted to share it as another option.

Number Of Ingredients 13

1 1/2 cups whole wheat flour
1 cup quick oats
1/2 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup raisins
8 ounces crushed pineapple in juice (do not drain)
1/2 cup shredded zucchini
1/2 cup skim milk
1/3 cup unsweetened applesauce
1 large egg

Steps:

  • Preheat oven to 400.
  • Mix all ingredients.
  • Lightly grease/flour 12 muffin cups.
  • Fill cups almost full.
  • Bake 20-22 minutes until golden brown.
  • Let muffins stand for a few minutes, remove from muffin tin, and cool 10 minutes before eating.
