GLORIFIED "RICE" SALAD

GLORIFIED

I hadn't made this in years until last month for our 'Christmas in July' party for our ladies group. The last time was in the early 80's that I had it. I didn't have enough rice so I improvised. It was a big hit. I used orzo pasta. You can also use fresh fruits instead of canned. Mix it up to your liking.

1 small can mandarin oranges, chopped, drained
1 small can pineapple tidbits or crushed, drained
1 large can fruit cocktail, drained
1 small jar marchino cherries, quartered (opt)
1-1 1/2 cup coconut
1/2-1 cup walnuts, chopped (opt)
1/2 bag pastel mini-marshmallows
1 pint whip cream, whipped or small tub coolwhip
8 oz orzo pasta, uncooked

Steps:

  • 1. Cook orzo according to directions on package. Rinse in cold water. Can cook the day before and place in fridge over night.
  • 2. Open and drain all fruits, except cherries. If not using the whole jar of cherries, remove what you want and dry them on a paper towel and then quarter them.
  • 3. While orzo is cooling, whip up whip cream to stiff peaks.
  • 4. Stir all ingredients into whipped cream and chill.
