This is a recipe I've gotten from my mom, who got it from my grandma. They would make this usually for holiday meals while I was growing up. It's been my favorite since I can remember. Number Of Ingredients 5

2 pkg lemon jello
1 can(s) crushed pineapple (20 oz)
4 c cooked rice, not minute rice
1 pt whipping cream
8 Tbsp sugar (for the whipping cream)

Steps:

  • 1. Dissolve jello in 2 c Hot water. Drain the pineapple, add the juice to enough water to make 1 1/2 c. Add this to the jello/hot water. Let thicken, then add the cooled rice and pineapple. Let this set up. Whip the cream with the sugar, and fold into the rice/pineapple mixture.
