Gingersnap Peanut Butter Pancakes image

I came up with this recipe one morning when I was feeling experimental. If you love ginger snap cookies with peanut butter you should try these! Try adding bananas and crushed gingersnaps to the pancakes once cooked. Warm maple syrup completes the recipe. Enjoy!

I'm not a big fan of gingersnaps, but I still enjoyed these pancakes. The peanut butter helped to balance out the spice of the gingersnaps.

I'm allergic to peanuts, so I used almond butter instead. The pancakes were still really good, but I think the peanut butter would have been better.
