Number Of Ingredients 10

1 c sugar
1 c butter
2 eggs
1 3/4 c dark molasses
4 1/8 c flours
2 tsp baking soda
2 tsp ground cinnamon
1 1/2 tsp ground ginger

  • 2. In a large bowl, cream together the sugar and butter. Beat in the eggs one at time, and mix in the molasses.
  • 3. In a separate bowl, sift together the flour, baking soda, cinnamon, ginger, and cloves. Blend into the creamed mixture. Stir in the hot water. (it will be quite liquid, but keep on stirring, it will be fine after a few minutes ;) Pour into the prepared pan(s).

This cake is a great way to use up leftover gingerbread cookies. I crumbled some cookies into the batter and it added a nice bit of texture.

I added some chopped walnuts to the batter and it gave the cake a nice crunch. I also used a molasses-based frosting instead of cream cheese and it was delicious.

I'm not a huge fan of gingerbread, but I really enjoyed this cake. It's not too sweet and the spices are well-balanced.
