The strength of this tea is a matter of individual taste. Sometimes when I have a cold or the flu, I put a pot on in the morning and let it simmer throughout the day. Every time I pour myself a cup I just add more water to the pot (the ginger root still has a lot of flavor in it).

Time 30m

Yield 1 to 2 servings

Number Of Ingredients 3

1/2 cup coarsely chopped fresh ginger root (don't bother peeling it but give it a quick rinse before chopping)
3 cups water
Honey to taste

Steps:

  • In a small saucepan, combine the ginger root and water, bring to a boil and simmer for ten minutes. Taste and if it tastes too weak, continue simmering; if it tastes too strong add more water. Strain and sweeten with honey to taste.
