This soup is a great way to use up leftover carrots and parsnips. It's also a great way to get your daily dose of vegetables.

This soup was just okay. It wasn't bad, but it wasn't anything special either. I probably wouldn't make it again.

I've tried many carrot and parsnip soups before, but this one is by far the best. The ginger adds a really nice depth of flavor. I will definitely be making this again and again.

Delicious and easy to make! I'm not a huge fan of parsnips, but they were surprisingly good in this soup. The ginger and carrot really balanced out the flavor. I'll definitely be making this again.

Not a fan. The soup was bland and the flavors didn't really come together. I followed the recipe exactly, but it just didn't work for me.
