Found this on a website and LOVE this recipe!!! I've served it with grilled chicken breasts or even just eat it on its own. So good!

Time 23m

Yield 2-4 serving(s)

Number Of Ingredients 5

1 1/2 cups long-grain rice
1 bunch spinach
2 -3 cloves garlic
2 tablespoons olive oil
salt and pepper

Steps:

  • Cook the rice in a rice cooker, or according to the directions on the package. (Don't make it too dry... a little moisture will help it all stick together later!)
  • Wash the spinach well-- spinach tends to be very gritty.
  • Chop off the bottom 1" or so of the stems; tear or chop the remaining leaves and stems into 2"-3" long sections.
  • Toss the spinach into a pot, along with 1/4 cup of water.
  • Heat on high; when the water boils, cover the pot.
  • Cook for 2-3 minutes, until the spinach is wilted.
  • Drain and set aside.
  • In a skillet, heat 2 tbsp.
  • olive oil on medium.
  • When the oil is hot (throw in a piece of garlic and it sizzles), add the chopped garlic and sauté for 2-3 minutes, until the garlic begins to soften and turn translucent.
  • Add the drained spinach and sauté for another couple of minutes.
  • Season to taste with salt and plenty of pepper.
  • Add the cooked rice and stir well to combine.
  • Taste, then add more salt and pepper as necessary.
  • Serve.

This dish is so versatile. I've made it with different types of rice, spinach, and garlic. It's always delicious. I love that it's a one-pot meal. It makes cleanup a breeze.

This recipe is a keeper! It's easy to make and it always turns out delicious. The garlicky flavor is perfect and the spinach adds a nice touch of color and nutrition. I usually serve it with grilled chicken or fish.

I'm not sure what went wrong, but my dish turned out terrible. The rice was undercooked and the spinach was burnt. I think I might have used too much heat.

This recipe was just okay. The flavors were a bit muted and the rice was a bit dry. I think it needed more butter or oil.

I followed the recipe exactly and the results were disappointing. The rice was mushy and the spinach was tough. I think I might have overcooked the rice.

This dish was a bit bland for my taste. I think it needed more garlic and salt. The spinach was also a bit overcooked. I would probably try a different recipe next time.

This was a great way to use up some leftover spinach. The rice was fluffy and the spinach was tender. I added some extra garlic and it was perfect. I will definitely be making this again.

I'm not usually a fan of spinach, but this dish changed my mind. The garlic and butter really mellowed out the flavor of the spinach and made it very palatable. The rice was also cooked perfectly and the overall dish was very satisfying.
