Having never made a roast before, I experimented with a few ingredients to come up with this hearty all-in-one meal. Not only is it easy, but the tender entree gets terrific flavor from garlic, onion and bay leaves.

This roast was a little dry for my taste, but the flavor was good. I think I would add some more liquid next time, maybe a cup of beef broth.

I'm not a big fan of chuck roast, but this recipe changed my mind. The garlic and herbs really infused the meat with flavor, and the slow cooking process made it fall-apart tender. I'll definitely be making this again.
