GANDY DANCER'S MARTHA'S VINEYARD SALAD image

Dressing
1 c. raspberry vinegar
½ c. olive oil
½ c vegetable oil
½ c maple syrup
2 T Dijon
2 T Dried tarragon (4 T fresh)
Salt to taste
Salad
1 head Bibb lettuce
½ head Red leaf lettuce
¼ c crumbled bleu cheese
12 red onion rings, sliced half an inch thick
3 T toasted pine nuts

Steps:

  • To make dressing, whisk together raspberry vinegar, oil, maple syrup, mustard, tarragon and salt. To make the salad: Tear lettuce leaves and toss in large bowl with ¾ c dressing. Divide lettuce onto plates and serve topped with blue cheese, onion rings and nuts.
