GA KHO GUNG (VIETNAMESE BRAISED CHICKEN WITH GINGER) image

1 lb boneless chicken
1/2 onion
2 cloves garlic
1 knob ginger
1 tsp pepper
1/2 tsp salt
2 tsp sugar
2 tbsp fish sauce
1 cup water
1 tbsp oil

Steps:

  • cut chicken into bite size pieces turn wok on high heat add sugar to make caramel sauce - stir -let it get golden brown stir when becomes brown - do not let get darker add chicken, then garlic, onion and ginger, stir after each addition then stir about 2 minutes do not cook chicken all the way through - chicken should be opaque add salt, pepper, fish sauce, then water stir to incorporate cover until cooks all the way through and caramelizes leave on high heat
