FRUITY CHICKEN SALAD image

Number Of Ingredients 12

1 head green leaf lettuce
2 boneless chicken breasts
1 can baby corn, drained
1 cup cherry tomatoes
1 small avocado, cut up
1 small can of mandarin oranges,
drained and rinsed
6 slices of bacon, fried,
drained and crumbled
olive oil
raspberry chipotle salsa
seasame dressing

Steps:

  • Clean and cut up lettuce into large bowl. Cut up chicken breasts into 1-2" pieces and fry in olive oil. When chicken starts turning white, generously baste with raspberry chipotle salsa. Continue basting and frying until chicken is done. Add corn, tomatoes, avocado, and oranges to lettuce and toss. Top off salad mixture with chicken and crumbled bacon. Serve and dress with seasame dressing.
