FRUIT SOUP image

This soup can be served either warmed or chilled, as you prefer. Very sweet strawberries are best for this recipe. Otherwise, you may need to add more sugar. Recipe: The Best of Russian Cooking Photo: www.tasteofhome.com

Number Of Ingredients 5

4 c hulled strawberries
1 c sugar
1 c sour cream
4 c cold water
1 c claret wine

Steps:

  • 1. Rub the strawberries through a fine sieve, or puree them in a blender or food processor. Place them into a large cooking pot.
  • 2. Add the sugar, then the sour cream, and mix well. Add the water and wine and heat very slowly over low heat, stirring with a WOODEN SPOON. Do not boil. Serve warm or cold.
  • 3. When serving cold, you may garnish with a few whole berries. Can also make this soup using raspberries either alone or with strawberries.
