Fruit Salad with Strawberry-Poppy Seed Vinaigrette image

1/2 cup sliced fresh strawberries
1 tablespoon sugar
1 tablespoon raspberry vinegar
1/3 cup Yoplait® Light Fat Free vanilla yogurt
3/4 teaspoon poppy seed
4 cups loosely packed bite-size pieces fresh spinach
2 kiwifruit, peeled and sliced
1 mango, peeled, seed removed and cut into wedges or chunks
1 pint (2 cups) fresh strawberries, sliced
1 cup seedless red grapes, halved if desired

Steps:

  • Place 1/2 cup sliced strawberries in blender or food processor. Cover and blend until smooth. Add sugar and vinegar; cover and blend. Add yogurt; cover and blend until smooth. Pour into small bowl. Stir in poppy seed. Refrigerate until serving.
  • To assemble salads, layer all salad ingredients on 4 individual salad plates. Drizzle vinaigrette over salads. Serve immediately.
