French Vinaigrette image

I got this recipe from a random internet search when I was looking for a salad dressing to serve during my French-themed dinner night. This totally reminds me of something I've eaten in a restaraunt...it's so good, and ended up being my favorite part of the entire meal! Best served over a bed of mixed organic baby greens. There aren't a lot of ingredients, so substitutions are not recommended.

This vinaigrette is a great way to use up leftover herbs. I like to add a little parsley, chives, and tarragon.

I'm not a fan of Dijon mustard, so I used yellow mustard instead. It was still really good.

I didn't have any shallots on hand, so I used a small onion instead. It worked out just fine.

This vinaigrette is a little too tangy for my taste. I think I'll add a little more honey next time.
