French Rhubarb Pie image

This recipe appeared in our local paper who dedicates the back page to the Amish population in the area. Everthing is printed as the Amish write it. This was shared by Mrs. Byler. I have eaten it and it is gooooooood.

Number Of Ingredients 9

1 large egg
1 c sugar
2 c diced rhubarb
2 Tbsp flour
1 tsp vanilla extract
TOPPING MIX
3/4 c flour
1/3 c butter ( or oleo)
1/2 c brown sugar

Steps:

  • 1. Mix the first five (5) ingredients together. Pour into an unbaked pie shell. (I use pre-made shells).
  • 2. Mix together the topping mix--flour, butter, brown sugar. Will be crumbly. Put the topping mix over the mixture in pie shell.
  • 3. Bake at 400 for 10 minutes. Then 350 for 30 minutes or until done.

This pie was a bit too tart for my taste, but I think that's just a personal preference. The crust was delicious though, and the filling was well-balanced.
