Fluffy Pepperjack Egg Bake image

This wonderful egg recipe takes minutes to prepare and only 35 min to bake. When fresh out of the oven it's light and fluffy and makes a great meal to share with family. As leftovers, it's a fabulous quick meal in the microwave! This recipe makes TWO 9x13 pans of eggs to be warned that it makes a lot. But it's addicting!

This recipe was a little too spicy for me, but my husband loved it. I'll probably make it again, but I'll use a milder cheese next time.

I'm not a big fan of pepperjack cheese, but I thought I'd give this recipe a try anyway. I'm glad I did! The cheese wasn't too overpowering, and the eggs were cooked perfectly.

This recipe was a little bland for my taste. I added some diced jalapenos and a pinch of cayenne pepper, and it was much better.
