Fluffy Light Meat Loaf image

Number Of Ingredients 13

1 lb ground beef
1 can(s) tomato paste, 6 ounces
1/2 c oatmeal, uncooked
3 Tbsp green pepper, finely chopped
2 Tbsp bran
2 Tbsp wheat germ
1 small onion, finely chopped
1 Tbsp fresh parsley, chopped
1 egg, lighly beaten
1/4 tsp finely chopped garlic
1/2 tsp salt
1/4 tsp freshly ground black pepper
chili sauce

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Combine all loaf ingredients, using your hands.
  • 3. Form into loaf and place in 9x5x3\" loaf pan, cover with layer of chili sauce (or ketchup if desired), bake 50 minutes to 1 hour.
  • 4. (Do not overbake, since part of the secret of fluffiness is shorter cooking time.)
  • 5. Serve the meat loaf sliced and hot.
  • 6. Variation: Half ground veal and half ground beef can be used for the meat loaf--lower in calories.
