Steps:
- CARAMEL In a saucepan, bring water and sugar to a boil, stirring until sugar dissolves. Lower the heat and burn the sugar into a soft caramel. Immediately pour caramel into six ramekins, tipping quickly to coat the bottoms. Set aside to let cool. FLAN Preheat oven to 325 degrees. In a large bowl, using a hand mixer, beat the cream cheese until soft. Beat in eggs and egg yolks, one at a time, until well combined. Continuing to beat, add the milk, one half cup at a time. Then add the vanilla and sweetened condensed milk, mixing well. Sieve the mix. Set aside. Put the caramel-coated ramekins on top of a dish towel inside a 3-inch-deep baking pan. Fill each of the caramel-coated ramekins with an equal amount of liquid custard. Fill the baking pan three-quarters full of hot water. Cook for about 40 to 50 minutes, until the center of the flan is pretty firm. Allow to cool and serve at room temperature or chilled. Loosen the edges with a knife before inverting on a plate to serve. Makes six 8-ounce servings.
