FIREMAN'S CHICKEN image

Number Of Ingredients 16

12 chicken breasts
1/8 cup olive oil
2 cloves garlic
1 lb baby spinach
1/2. Lb feta cheese
1/2 cup milk
4 beaten eggs
2 cups Italian bread crumbs
Peanut oil for frying
2 tbsp butter
1 cup sliced mushrooms
1 tbsp flour
1 cup chicken broth
1 cup white wine
Juice 1/2 lemon
1/4 cup parsley

Steps:

  • Pound chicken Heat large frying pan and add olive oil and garlic. Add spinach salt pepper until wilted Place spinach and cheese on breasts and roll and secure with toothpicks. Mix milk with eggs and dip each piece in egg wash and then in bread crumbs. Pan fry until golden brown, Remove from skillet reserving drippings. Bake in 350 oven. Remove remaining oil from skillet. Melt butter. Sauté mushrooms. Add flour. Add chicken broth and white wine and lemon juice. Remove chicken from oven and pour sauce over top. Top with parsley and serve.
