My sister-in-law is Filipino and made this dish one night for dinner for me. I fell in love! The meat just falls off the bone when you eat it! I have tweaked this recipe a bit to my liking and now you can enjoy it too!

I'm lactose intolerant, so I used dairy-free milk instead of evaporated milk in the chicken adobo. It worked perfectly, and the dish was still creamy and flavorful.

I'm a vegetarian, but I still wanted to try this chicken adobo recipe. I replaced the chicken with tofu, and it turned out great! The tofu absorbed the flavor of the sauce, and the dish was very satisfying.
