Fiesta Taco Casserole image

Number Of Ingredients 11

1 pound ground beef
1 (15-ounce) can spicy chili beans, undrained
1 cup salsa
2 cups coarsely broken tortilla chips
1/2 cup sour cream
4 medium green onions, sliced (1/2 cup)
1 medium tomato, chopped (3/4 cup)
1 cup shredded Cheddar or Monterey Jack cheese (4 ounces)
tortilla chips, if desired
Shredded lettuce, if desired
salsa, if desired

Steps:

  • 1. Heat oven to 350°.2. Cook beef in 10-inch skillet over medium heat 8 to 10 minutes, stirring occasionally, until brown drain. Stir in beans and 1 cup salsa. Heat to boiling, stirring occasionally.3. Place broken tortilla chips in ungreased 2-quart casserole. Top with beef mixture. Spread with sour cream. Sprinkle with onions, tomato and cheese.4. Bake uncovered 20 to 30 minutes or until hot and bubbly. Arrange tortilla chips around edge of casserole. I made this casserole in a slow cooker and it turned out great. I just browned the ground beef and then added all of the other ingredients to the slow cooker. Cooked on low for 6 hours and it was perfect.

I'm a vegetarian, so I used tofu instead of ground beef in this casserole. It turned out great! The tofu absorbed all of the flavors of the other ingredients and it was very satisfying.
