My neighbor came up with this and brought me some to try. After one taste I asked how he made it and this is what he said. I'm guessing at the amounts of some ingredients.

I'm not a big fan of spicy food, so I omitted the jalapeƱos. The dish was still delicious.

This recipe is a great way to use up leftover chicken. I shredded some leftover roasted chicken and added it to the crock pot with the other ingredients.

I doubled the recipe and froze half of it for later. It reheated well and tasted just as good the second time around.

I'm not a huge fan of cilantro, so I substituted fresh parsley instead. It worked out great.

I added a can of diced green chiles to the recipe for a bit of extra spice. It gave the dish a nice kick without being overpowering.

I cooked this dish on low for 8 hours, and the chicken came out fall-off-the-bone tender. It was perfect served over rice or tortillas.
