This recipe is really good. It can be made into 2 smaller casseroles bake 1 and freeze 1 for later. To bake a frozen casserole, thaw first. Other meats can be substituted for the ground beef. Try shredded chicken. Yum!

Steps:
- 1. In a skillet, over medium heat, brown the first 6 ingredients.
- 2. Drain off the fat if necessary. Add salsa, black beans, enchilada sauce, corn, & spinach.
- 3. Add cream cheese, sour cream, & olives. Cook for 5 minutes.
- 4. Layer 1 cup of crushed fritos, 1/2 of the meat mixture, 3/4 cup cheese, 1 cup crushed fritos, the rest of the meat mixture, & the remainder of the cheese into a 9 x 13 casserole dish.
- 5. Bake at 350 degrees for 30 minutes.
