Steps:
- Onion Jam: Sauté onions in hot oil in a large nonstick skillet over medium-high heat 10 minutes. Reduce heat to low; stir in sugar, vinegar, and thyme. Cover and cook 10 minutes or until onion is very tender. Keep warm. Season the meat, add fresh parsley, oregano and lightly mix Gently shape into four patties. Add the feta cheese and top with a patty. Seal so that the cheese will not run out, while grilling. Coat cold cooking grate of grill with vegetable cooking spray, and place on grill. [email protected]I'm not a huge fan of lamb, but I loved these burgers. The feta and fig stuffing really mellows out the flavor of the lamb, and the red onion jam adds a nice sweetness. I will definitely be making these again.

[email protected]The red onion jam was a bit too spicy for my taste. I would have preferred a milder jam, or maybe just some plain red onion slices.

[email protected]I wasn't a fan of the feta-stuffed figs. I thought they were too sweet and overpowering. I would have preferred just plain feta cheese.

[email protected]The burgers were a bit dry, but the flavors were still good. I think I would add some more moisture next time, maybe by using ground beef or turkey instead of lamb.
Muffin The Bird
[email protected]These burgers were a bit too greasy for my taste. I think I would have preferred them if they had been cooked on a grill instead of in a pan.
