Steps:
- Boil the broccoli in a pot of lightly salted water until tender. In a medium sized pot, place the chicken broth, celery and onion. Bring to a simmer and cook until tender. Drain broccoli and add it to the pot with the chicken broth and onion and celery. Simmer for a few minutes longer. In a seperate small bowl, mix together the corn starch and fat free half and half. Use an emersion blender or a reagular blender to puree the vegetables and broth together. Slowly add in the cornstarch and half and half mixture and stir well with a whisk until thickened. Add margerine if desired and stir until well blended. Taste for seasoning and serve! Makes about 4 cups of soup.
