Fantastic Green Rice Dish image

Best casserole I've tasted in a long time!

Number Of Ingredients 7

1 cup uncooked white rice
½ cup shredded Cheddar cheese
1 small onion, grated
2 eggs, beaten
¼ cup butter, softened
1 cup fresh parsley
1 ½ cups milk

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • In a saucepan bring 2 cups of water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • To the cooked rice add cheese, onion, eggs and butter. Mix well and gently stir in parsley and milk. Transfer to a 2 quart casserole dish.
  • Bake in preheated oven for 1 1/2 hours.
