Steps:
- Cook sliced mushooms in 1 Tbsp. olive oil until soft and juices released over medium heat. Add garlic, onion and red wine, simmer over medium high heat for 10 minutes. Remove garlic/onion/shrooms from pan. Brown ground turkey breast in 2 tsp.oil, chop into very small pieces. Add garlic/onions/shrooms mixture, and carrots, peas, tomato soup, bay leaf and thyme to turkey and 1/2 cup water. Simmer with lid on for 30 minutes on medium-high heat after mixture comes to a boil. Salt and pepper to taste. Pour contents into deep dish pie pan, remove bay leaf. Top with mashed potatoes and smooth surface. dust with nutmeg and then all parmesean cheese. Bake at 350 for 25 minutes.. Serve with large spoon into plates.
