Yield 4 servings

Number Of Ingredients 8

2 large leeks, well trimmed, about 3/4 pound
3 large, unblemished endives
2 tablespoons butter
2 tablespoons freshly squeezed lemon juice
Salt to taste if desired
Freshly ground pepper to taste
1/4 cup heavy cream
1/8 teaspoon freshly grated nutmeg

Steps:

  • Cut the leeks lengthwise, leaving the trimmed stem ends intact. Rinse well between the leaves. Drain well. Chop the leeks to make very small cubes. There should be about 2 cups.
  • Trim off the ends of the endives. Cut each crosswise into thin slices. There should be about 4 cups.
  • Heat the butter in a skillet and add the leeks. Cook, stirring often, about 2 minutes without browning.
  • Add the endives and sprinkle with lemon juice. Add salt and pepper. Cook, stirring often, about 1 minute. Cover closely and cook 5 minutes.
  • Add the cream and nutmeg and stir. Serve piping hot.

I'm not sure what all the fuss is about. This dish was just okay. The creamy sauce was bland, and the endives and leeks were tough. I think I could have made a better dish myself.

This dish was a disaster. The creamy sauce curdled, and the endives and leeks were burned. I'm not sure what went wrong, but I will definitely not be making this dish again.

This dish was a bit disappointing. The creamy sauce was bland, and the endives and leeks were tough. I think I would have liked it better if the sauce had been more flavorful and the endives and leeks had been more tender.

This dish was good, but not great. The creamy sauce was a bit too thick for my taste, and the endives and leeks were a bit too soft. I think I would have liked it better if the sauce had been a bit thinner and the endives and leeks had been a bit mor

This dish was okay, but I've had better. The creamy sauce was good, but the endives and leeks were a bit too bland. I think I would have liked it better if I had added some herbs or spices to the sauce.

This dish was a bit too rich for me. The creamy sauce was very heavy, and the endives and leeks were a bit too soft. I think I would have liked it better if the sauce had been a bit lighter.

This dish was way too salty for me. I think I accidentally added too much salt to the sauce. The endives and leeks were cooked well, but the sauce was just too salty to enjoy.

I'm not usually a fan of endives, but this dish changed my mind. The creamy sauce really mellowed out the bitterness of the endives, and the leeks added a nice sweetness. I'll definitely be making this again!
