ENDIVE WITH GOAT CHEESE AND WALNUTS image

1/3 cup walnuts
2 tbsp honey
1/4 cup balsamic vinegar
3 tbsp orange juice
1/3 cup goat or blue cheese
16 endive leaves
16 small orange section
1 tbsp finely chopped chives
fresh ground black pepper

Steps:

  • pre-heat the oven to 350 degrees Coat the walnuts with 1 tbsp of the honey and place on cookie sheet. Bake for 5 minutes, stir, and bake for an additional 5 minutes. Remove and set aside to cool. In a small saucepan combine 1 tbsp honey, balsamic vinegar, and orange juice. Bring to a simmer and reduce to about 3 tbsp. Allow to cool to room temperature. In each endive leaf place 1 orange section, 1 tsp. of the cheese, 1 tsp of the nuts, drizzle with vinegar, sprinkle with chives and fresh ground black pepper
