Halved cranberries and slivers of endive, apple, and yellow pepper rest like confetti atop a bed of frisee. The endive mixture was tossed with a cranberry-mustard vinaigrette, then arranged on the greens.

I'm not usually a fan of endive, but this salad changed my mind. The bitterness of the endive was perfectly balanced by the sweetness of the apples and cranberries. I will definitely be making this salad again.
