Enchiladas Con Pollo image

This is a mild but tasty enchilada casserole. I don't care for Mexican food, but my sister made this and I loved it. You can substitue ground beef and/or refried beans for the chicken. Serve with a crispy salad. Enjoy!!

These enchiladas were not what I expected. The sauce was too bland and the chicken was overcooked. I would not recommend this recipe.

These enchiladas were a bit too cheesy for my taste, but they were still very good. I would recommend using less cheese if you don't like cheesy dishes.
