I got this recipe from a co-worker who said it was so good and easy to make and she was right! Very tasty and even better the next day.

Provided by Stephanie Dodd

Time 30m

Number Of Ingredients 7

1 lb ground beef, browned and drained
2 can(s) cream of chicken soup
6 oz evaporated milk (do not substitute)
1 can(s) enchilada sauce
1 - 2 c grated cheddar cheese
1/2 pkg tostito chips
1 small can green chilies (optional)

Steps:

  • 1. In a 9 x 13" pan, layer the Tostitos on the bottom. Mix ground beef, soup, evaporated milk, green chilies and enchilada sauce together and cook until bubbly. Pour over Tostito chips. Sprinkle grated cheddar cheese over the top. Bake at 350 degrees for 15 - 20 minutes until bubbly. ENJOY!!
  • 2. I add the green chilies and it does not make this casserole too spicey as we don't like real spicey food. Just an added flavor but it can be omitted.

This casserole is a great way to use up leftover chicken or turkey.

This casserole was a bit too dry for my taste. I added some extra salsa, and it was much better.

This casserole was a bit too spicy for my taste, but my husband loved it. I'll definitely make it again, but I'll use less chili powder next time.

This enchilada casserole was easy to make and tasted delicious! I used ground turkey instead of beef, and it turned out great.
