My aunt made the best eggplant dressing. Unfortunately I did not copy her recipe. My husband gathered eggplant from the garden and I started searching online for a recipe that sounded like hers. I made it the other night and my family said the recipe was a keeper.

- 1. Cook until done. Add eggplant and cook a few minutes more,
- 2. Add as much rice as you like,
- 3. May bake in oven a few minutes or cook on top of stove in heavy skillet.
