Egg Bhurji image

This is a quick and easy recipe. It is an Indian take on scrambled eggs. It is best enjoyed with toasted bread and a cup of chai in the morning.

¼ cup vegetable oil
1 teaspoon garam masala
1 teaspoon ground turmeric
1 teaspoon ground coriander
salt to taste
½ cup finely chopped onion
3 green chile peppers, sliced
2 large eggs

Steps:

  • Heat oil in a skillet over medium heat; add garam masala, turmeric, coriander, and salt. Cook and stir onion and green chile peppers in the seasoned oil until onion is slightly tender, about 5 minutes.
  • Crack eggs into the skillet and season with salt; cook and stir until eggs are set and scrambled, about 5 minutes.
