Quick and easy to throw together. Many people think this is lima beans when they first see it. Edamame are actually soy beans, green, fresh shelled. They are available frozen, either in the shell or without.

Steps:
- 1. Toss together edamame, bell pepper, garlic, and parsley in a medium bowl.
- 2. Whisk together oil, vinegar, lemon juice, salt, and pepper. Whisk until light and well-blended. Pour over edamame and combine well. Top with sliced green onions. May serve immediately, or refrigerate and serve well-chilled.
- 3. Toss well to combine before serving.
