Edamame Salad image

Quick and easy to throw together. Many people think this is lima beans when they first see it. Edamame are actually soy beans, green, fresh shelled. They are available frozen, either in the shell or without.

Number Of Ingredients 10

1 pkg frozen edamame, shelled, cooked and cooled
2 Tbsp minced red bell pepper
2 tsp minced garlic
2 Tbsp chopped fresh parsley
4 Tbsp olive oil
2 Tbsp balsamic vinegar
1 Tbsp lemon juice, fresh
1/4 tsp kosher or sea salt (or to taste)
1/4 tsp fresh ground black pepper (or to taste)
2 green onions, thinly sliced

Steps:

  • 1. Toss together edamame, bell pepper, garlic, and parsley in a medium bowl.
  • 2. Whisk together oil, vinegar, lemon juice, salt, and pepper. Whisk until light and well-blended. Pour over edamame and combine well. Top with sliced green onions. May serve immediately, or refrigerate and serve well-chilled.
  • 3. Toss well to combine before serving.
