Easy zucchini squares image

These zucchini squares make a great side dish or a great light lunch. Here's one delcious way to get your veggies!

5 eggs, lightly beaten
1/2 c olive oil
1/2 c grated parmesan cheese
2 Tbsp chopped fresh parsley
1/2 tsp seasoned salt
1/2 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp dried basil
1/2 c chopped onion
2 c bisquick heart healthy mix
3 c thinly sliced zucchini

Steps:

  • 1. Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. In lg bowl, whisk together eggs, oil, parmesan cheese, parsley, salt, oregano, basil and garlic powder.
  • 2. Whisk in onion then baking mix. Stir in zucchini. Spoon into pan. Bake until golden, about 25-30 mins.
