Easy Yogurt Muffins image

Great for early morning, or late night snack

Number Of Ingredients 9

6 oz yogurt, plain or fruit flavored
1 egg
3/4 c brown sugar
1/4 c cooking oil
1/2 tsp vanilla extract
2 c flour
1/2 tsp baking powder
1/2 tsp baking soda
1 c blueberries, frozen or chocolate chip ( you choose )

Steps:

  • 1. Preheat oven @ 350 degrees ready muffin tin or bread pan. In a bowl mix yogurt, egg, oil, vanilla, and brown sugar until creamy.
  • 2. Add dry ingredients, flour. Baking soda and powder, mix well. Pour into muffin cups. Or greased pan. Place in center of oven preheated to 350 degrees.
  • 3. Bake for 25 minutes, or untill golden brown. Remove let cool 10 minutes and enjoy.

I'm not a huge fan of yogurt, but these muffins were surprisingly good! The yogurt flavor wasn't too strong, and the muffins were really moist.
