Easy Salmon Croquettes image

This is one of our all time favorite, quick meals! My husband never had them until he met me and my children growing up always fought over these. I would have to double the recipe because they just don't make enough. It is never any left!!!

1 pkg pink salmon
1 egg
2 Tbsp flour
1/4 c finely chopped onion
3-4 finely crumbled saltine crackers
pepper to taste

Steps:

  • 1. In a bowl mix salmon with juice (the package does not have much, add the other ingredients. Mix all this well. If it seems to runny add more flour to it. The flour helps you to be able to form the patties. I form a rounded ball and use my spatula to mash them down while frying them in a small amount of oil. I sometimes fry them in a non stick pan with olive oil. I have done it both ways. Both are good but they tend to brown better in the oil.
  • 2. With a small package of Salmon have usually have three patties each for me and my husband. If the sons come over I have to add more packages of Salmon.
