Easy Cuban Beans & Rice image

There are so many versions of beans and rice, this one is typical of Cuban cuisine, but using shortcut seasonings.

1 Tbsp olive oil, good quality
2 Tbsp tomato sauce
1 clove garlic, minced
1 Tbsp sofrito -tomato cooking sauce
2 pkg sazon with coriander and annatto
15 oz small red beans
1 1/2 c white rice
1/2 tsp sugar

Steps:

  • 1. Heat oil in medium saucepan over medium-high heat. Add tomato sauce, garlic, sofrito and sazon, cook until fragrant, about 1 minute.
  • 2. Drain liquid from the can of red beans into measuring cup; add enough water to measure 3½ cups. Add all of the liquid to pot; bring to boil. Add beans, rice and sugar; stir. Bring rice mixture to a boil; reduce heat to medium low and cook, covered, until water is absorbed, about 20 min.
  • 3. Remove pot from heat. Let sit until rice becomes tender, about 5 minutes. Fluff with a fork. Serve.
