Easy Country Breakfast Casserole image

This dish makes a very hearty breakfast, and easily feeds a large family or group. Fortunately, it is also easy to halve this recipe. I usually serve this with a fruit salad or compote.

This casserole was a little too bland for my taste. I think I'll try adding some more spices next time.

I've made this casserole several times now, and it's always a crowd-pleaser. It's perfect for a lazy weekend breakfast or brunch. I usually add some extra vegetables, like chopped bell peppers or spinach, to make it even healthier.
