Double Chocolate Muffins image

Made these this morning with my youngest daughter. They were a huge hit with my crowd and the recipe makes enough for a quick snack later too!

Number Of Ingredients 12

2 3/4 c all-purpose flour
6 Tbsp cocoa powder
1 3/4 tsp baking soda
1/4 tsp salt
1 c semi-sweet chocolate chips
1/2 c chopped pecans or walnuts (your fav)
1 stick unsalted butter, softened
3/4 c packed brown sugar
1/4 c granulated sugar
2 tsp vanilla
3 eggs
1 c milk

Steps:

  • 1. Preheat oven to 375
  • 2. Sift flour, cocoa, baking soda,baking powder and salt.
  • 3. In another bowl, toss the chocolate chips and nuts with 3 tsp of the sifted mixture.
  • 4. Place sugars and butter in a large bowl; beat with a mixer at medium speed until well combined (about 3 minutes). Add vanilla. Beat in the eggs one at a time.
  • 5. Add flour mixture and milk alternately to granulated sugar mixture, beginning and ending with flour mixture. Fold in chocolate chips and walnuts.
  • 6. Spoon batter into muffin cups lined with muffin cup liners. Bake for 20-30 minutes or until cake springs back when touched lightly in center or until wooden pick inserted in center comes out clean.
