DJ'S TURKEY MEATLOAF image

Number Of Ingredients 14

2 cloves of garlic
1 small yellow onion - diced
1 package mushrooms - diced
2 zucchini - diced
2 carrots - diced
1 red pepper - diced
2 lbs turkey
¼ cup milk - nonfat okay
1 cup of bread crumbs
2 eggs
2 - 3 Tbls worcestershire sauce
2 - 3 Tbls ketchup
½ can diced tomatoes
parsley (optional) diced

Steps:

  • Saute garlic and onions in olive oil, once clear add diced carrots and sauté 5 more minutes, then add zucchini and red pepper and sauté for 3 more minutes, adding 2 - 3 Tbls of ketchup ! Next, add diced mushrooms and cook for 15 minutes, adding 2 - 3 Tbls of worcestershire and diced parsley. In a separate bowl mix 1 cup of bread crumbs and ¼ cup milk and set aside for 5 minutes, then add 2 eggs. Add bread crumb mixture to veggies along with ground turkey and mix very well. I usually try and have half turkey and half veggies..seems to work! Arrange meatloaf in glass baking dish and top with a mixture of diced tomatoes with ketchup and bbq sauce. Bake for 1 hour at 400 degrees. This recipe is really easy if you use a cuisinart. Also, you will have more than one meatloaf so cook them all...they freeze great
