Diabetic Lasagna image

I'm not a fan of cottage cheese, but this was really good.

Number Of Ingredients 11

1 lb hamburger meat
1 chopped onion
1 3/4 c water
1 pkg dry spaghetti sauce
1 egg
1 Tbsp parmesan cheese
1 can(s) crushed tomatoes (28 oz.)
1 can(s) tomato paste (6 oz.)
2 c fat free cottage cheese
wheat noodles (uncooked)
1 c low fat mozzarella cheese

Steps:

  • 1. 1. Brown hamburger meat and drain. 2. Add onion. 3. Stir in tomatoes, water, tomato paste, and spaghetti sauce. 4. Simmer 20 minutes.
  • 2. 5. In a bowl, combine egg, cottage cheese and Parmesan cheese. 6. Spread layer of meat sauce in casserole dish. 7. Layer with noodles, cheeses, meat.
  • 3. 8. Cover and bake 350 for 50 minutes. Note: I only used 4 noodles and it was plenty.
