Diabetic Friendly Black Bean & Spinach Salad image

1/4 cup balsamic vinegar
2 tablespoons olive oil
1 tablespoon lime juice
1/2 teaspoon salt
1 teaspoon sugar substitute
1/2 teaspoon black pepper
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1 garlic clove
1/2 cup cilantro
1 medium red onion
1/2 lb Baby Spinach
2 roma tomatoes
5 stalks asparagus
1 large avocado
1 bell pepper
1 (8 ounce) can black beans

Steps:

  • Mix the dressing in a food processor so it emulsifies. This will also help cut up the garlic and cilantro. Steam the asparagus to desired doneness. Cut up all veggies into bite size pieces and mix with dressing. Chill for at least three hours before eating.
