Denver Omelette Casserole image

I don't remember where I got this recipe but have been using for many years. Great for brunch and potlucks. It calls for a 9x13 pan but I use the next size up in glass.

Number Of Ingredients 8

12 eggs
1 c sour cream
1/2 c margarine, melted
1 c tomato, chopped
1 small green pepper, chopped
1 small onion, chopped
1 lb ham, chopped
2 c cheddar cheese, shredded

Steps:

  • 1. Beat eggs until well combined. Add remaining ingredients. Pour into buttered 9x13 glass baking pan.
  • 2. Bake at 325 for 1 hour.
  • 3. Let sit 5 minutes and cut into squares.
