It can be difficult to replicate the flavor and texture of authentic deli mac... but this recipe pulls it off beautifully!

Time 15m

Number Of Ingredients 6

1 lb elbow macaroni, cooked al dente
1 c white vinegar
1 c white sugar
1 c finely chopped bell pepper
1 Tbsp celery seed
2 or 3 big globs of mayo

Steps:

  • 1. Heat vinegar and sugar on stove until sugar is dissolved; cool.
  • 2. Toss vinegar sugar mixture with macaroni. Refrigerate in freezer bags for several hours to allow it to set. *NOTE* After soaking, it's possible for there to be some excess sugar/vinegar mixture, if you find it to be very soupy you can toss it into a colander for a minute to drain some off.
  • 3. Toss macaroni with peppers and celery seed. Add mayo to taste. Yummmo!

Too vinegary for my taste.

I was really excited to try this recipe but unfortunately it was a bit bland for my taste. I think next time I'll add extra mustard and some chopped fresh herbs to liven it up.

So easy and fast to make! Perfect side dish for our barbecue. I made a double batch because I knew it would be popular and I was right - it disappeared in minutes!

This recipe is definitely a keeper. The sweet pickle relish and Dijon mustard give it a unique and tangy flavor that everyone raved about. Will definitely make this again soon.

Super easy and everyone in the family loved it. I like that you can easily customize it with different ingredients. I added chopped celery and red pepper and used Greek yogurt instead of mayonnaise. Turned out perfect!

This was the BEST macaroni salad I've ever made - and I've been making it for years! I am NOT a fan of raw onions but this recipe converted me. My family loved this simple but delicious recipe and even my picky 10-year-old son went back for second -
