Steps:
- 1. Preheat oven to 350 degrees. line a cookie sheet with 8 mini aluminum loaf pans. Spray with non stick spray (I use coconut flavored) Cream butter and coconut oil in large mixer bowl. Add sugars and beat for 1 minute. Add bananas (I throw them in whole and let the mixer mash them while running).Beat 1 minute more. Add in eggs 1 at a time while mixer is running. Beat 1 minute more. Mix together milk, yogurt, and vanilla in a measuring cup and set aside. Stir together all dry ingredients. Add them alternately with the milk/yogurt mixture. Fold in chosen add ins and spoon batter into loaf pans. Bake for 35-45 minutes until golden brown and they test done. Brush tops with butter or coconut oil while still hot from of the oven. Enjoy!
- 2. Can be served plain or smeared with low fat cream cheese or Neufchatel cheese.
