Well I had a pound of ground beef I couldn't refreeze, a couple of baked potatoes leftover from a meal the day before, some mushrooms, onion and a couple of carrots I didn't want to go to waste so I threw them all together for a...

1 lb ground beef
1/2 medium onion, chopped
2 clove garlic, minced
1 c fresh mushrooms, sliced
1/2 c corn kernels, canned
2 Tbsp chives, dried
1 tsp salt
1 tsp pepper
1 Tbsp italian seasoning
2 large baked potatoes, peeled and sliced rounds
1 can(s) cream of mushroom soup
1/4 c milk
2 c sharp cheddar cheese, shredded

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Brown ground beef. In another sauce pan, sauté onions, garlic and mushrooms until tender. Combine beef and sautéed veggies together; add carrot, corn, chives, salt, pepper, and Italian seasoning.
  • 3. Pour ground beef mixture into a greased casserole dish; cover with potato rounds.
  • 4. Mix cream of mushroom soup with milk and pour over potatoes; top with shredded cheese.
  • 5. Bake for about 30 minute or until bubbly around edges of casserole. Serve
